Japanese persimmons are dried in the sun in the front yard of a farm in Koshu, Yamanashi Prefecture, as the season reaches its peak. The local dried persimmons are made by hanging peeled "Koshu hyakume" persimmons in the sun for around three weeks after sulfur fumigation and drying them again on straw mats in the sun for about 10 days.
